Tequila & Mezcal
Mezcal refers to a category of spirits made from the agave plant, Tequila is a specific category of Mezcal. What separates the two is how they are produced.
Tequila is only made from Weber Blue Agave and utilizes a different distillation process, using roasting ovens and copper pot distillation.
Coming in a variety of styles the flavour profile progresses from clean, fruity and vegetal flavours in Blanco’s into more complex oak derived flavours of Añejos.
- Blanco is unaged.
- Reposado which rests in oak barrels up to one year,
- Añejo which ages in oak barrels for one to three years.
- Extra Añejo which is aged for a minimum of three years.
Mezcal can be made from over 40 different agaves and use traditional methods of roasting piñas underground in stone-lined pits before being pulverized to extract their juices. The liquid is then fermented in open-air tanks and subsequently distilled in clay pots. The roasting of the piñas adds a smokey flavour profile that Tequila lacks.
