Cava

Spain’s answer to Champagne, Cava is a sparkling wine of denominación de origen (DO) status from Spain. It may be white (blanco) or rosé (rosado). The Macabeo, Parellada and Xarel·lo grapes are the most popular and traditional grape varieties for producing cava and Chardonnay and Malvasia are also permitted. It uses the traditional bottle fermentation method similar to Champagne and also comes with Reserva and Gran Reserva statements with increasing age requirements respectively.
